Many manufacturers print explicit build dates on these components, but many others have the manufacture date and other info, coded into the serial number on the data plate.

Gas-fired appliances feature an ANSI number, where the last four digits is the year of the standard. This doesn't indicate the year of the unit, but since ANSI is updated every few years, it will narrow down the possible age range.
